Simone Simon's Strawberry Chiffon Pie

This stunning French star of Cat People has whipped up a delightful, tasty treat!

Simone Simon was born in France in 1911. After working as a model and on the stage, she made her film debut in 1931. After a brief stint in Hollywood, she had a breakthrough role back in France with the 1938 classic La Bete Humaine opposite Jean Gabin. Simon went back to Hollywood for another try and is best remembered for her turn in the horror classic Cat People (1942) for director Jacques Tourneur. and producer Val Lewton at RKO. Other notable films include The Curse of the Cat People, La Ronde and The Devil and Daniel Webster aka All That Money Can Buy.

I found this recipe in Modern Screen Magazine from April / May 1938. The article is titled "French for Delicious" by Marjorie Deen.

Ingredients


1 pint of strawberries

3 egg yolks, slightly beaten

1/2 cup sugar

1 tablespoon lemon juice

1 package strawberry flavored gelatin

1/2 cup hot water

1/4 teaspoon salt

3 egg whites, stiffly beaten


Directions


Wash and hull berries. Crush enough berries to make 3/4 cup pulp and juice, reserving remaining berries to serve as garnish. Beat egg yolks and then add 1/2 of the sugar and lemon juice. Cook in double broiler until it coats the spoon, stirring constantly. Remove from heat. Stir in strawberry gelatin which has been dissolved in hot water. Add 3/4 cup of fresh strawberry pulp. Chill in bowl in refrigerator until slightly thickened. Beat salt and remaining sugar into the stiffly beaten whites. Fold lightly into gelatin mixture. Pour into cold baked pie shell or one of the popular graham cracker or cornflake shells. Chill until firm. Before serving, garnish with whole berries.
